Canada’s first large-scale perishable food rescue centre opened in Fredericton on Saturday, aiming to reduce food waste and address rising regional food insecurity.

The Thrive Food Rescue Centre will process surplus produce at risk of spoiling into frozen goods, storing them in freezers for distribution to food banks across the province.

Alex Boyd, CEO of Greener Village, said the concept emerged after his food bank received a tractor-trailer load of carrots with nowhere to store them — exposing a network-wide inability to accept and store large-scale fresh donations.
